Tomatoes are a good source of vitamins C and K, cucumber is a good source of vitamin K, and onion is a good source of quercetin, an antioxidant that has been shown to have a number of health benefits. There are a number of ways to vary this recipe. For example, you could add other seasonal vegetables, such as zucchini, bell peppers, or corn. You could also add some protein, such as grilled chicken or shrimp. If you're looking for a vegan or vegetarian option, you could omit the protein or add some chickpeas or lentils.
